Cilantro grows rapidly and matures quickly. If it has the the round seed pods on it and it is changing colour, it is finished. Harvest the seeds.
If your microenvironment allows it, plant some new seeds for a second crop if you use the greenery which you want nice and young and tender.

I plant cilantro just about every year and it seems to do better when it doesn't get too much direct sun - it goes to seed quite quickly if it does. Although, that's okay too, the seeds are coriander. I've had the best luck when they're in diffused sunlight in my greenhouse instead of on my patio. The other thing is to keep using it from the plant. That seems to prolong their lives.
