I was thinking Mad dog 20/20, but Ripple might be more subtle. And should the marinade be beer or malt liquer?

I say you marinade it in St. Ides or some other malt liquer. And then pair it with a nice Shiraz (red wine).

I would suggest a merlot. Racoon probably has a bit of zing to start with.
