I'm talking about leaving is running for 2-3 seconds after I turn the water off. I understand that it is designed to run with the water on, but the water isn't essential to lubricate a bearing or anything, right? My wife jumps on my case if I turn the water off first, and says that I'm going to ruin it...

First of all water isn't used for lubricating or cooling of the disposer, the only reason you use water is to flush the ground up food down the drain and to help prevent jamming of the disposer... A disposer has sealed bearings so the lubrication is built-in to the bearing case... you could run a disposer without water for as long as you want, as long as you have nothing being grinded up that is... You definitely wont hurt the disposer by letting it run a few seconds after you shut off the water, actually it's probably a good thing, by letting it run a few seconds after you will disperse the water out of the disposer faster and have less of a chance on rusting the chopping blades...

A few seconds is no problem. The water does provide some cooling effect to the unit but it's NOT a lubricant. The main function of the water is to flush away the the waste.
I still remember, back in 1950, a guy came around door-to-door selling disposers. He demonstrated it by sitting it on the floor on a peice of newspaper, turning it on and dropping a whole Coke bottle in it. That sucker ground up that old style, heavy glass bottle like it was nothing! Amazing. We bought one of course!

The water flushes the ground up material down the drain. If you run it without water, you jam up the works and the drain. However, if there is nothing in the unit - no harm.

Two or three seconds once or twice might not be a problem. But your wife is right: You could burn your disposal up if you habitually run it without water.

it is not a good idea to leave it on without the water on, the water acts as a lubricant

2 or 3 seconds isn't so bad, just keep it to a min.
