Pullman Grille - Main Street Station - Great food & service, the restaurant was actually built around the fireplace and sideboard niche from Preswick Castle in Scotland.

Mon Ami Gabi - the outdoor cafe at Paris - sits right across the street from the Fountains of Bellagio. Get reservations to sit "outside" after 7pm(fountain show every 15 min after 7p).
You do have to request to sit out side.

Emeril's is in the MGM Hotel & Casino.
If money is not an issue, hit up Prime Steakhouse in the Bellagio. It has an awesome view of the Bellagio Fountains and the food and service are realy good.
Inside the Forum Shops at Caesar's Palace, The Cheesecake Factory is excellent! Their menu is huge.
If you're in to buffets, try the Rio Carnaval Buffet. It has a variety of foods from Italian to Chinese. Definitely worth eating in.

Joel Robuchon at The Mansion - MGM Grand
Guy Savoy - Caesars
They are true traditional gourmet restaurants with different prix fixe menus created by the chef every night with wine pairings by a sommelier.
Make reservations in advance, wear a jacket, and expect to pay up to $300 per person.
Emeril is a fine chef but his restaurants are McDonald's compared to these places.

The Buffet at MGM Grand is very good. So is the one at Rio. Also there's a chinese resturanut that's good at The Mirage.

the best kept secret, but voted no. 1 is......THE CORTEZ ROOM at the Gold Coast Hotel/Casino. (just behind/across from the Rio.)
You won't regret it. Lots of locals there.
