It runs out of energy which is derived from the warm ocean waters. Less energy means that the hurricane weakens and eventually becomes a tropical storm or tropical depression.

It weakens because it doesn't have any water vapor that it usually gets over water. It can go from a cat.5 to a cat.1 or a tropical storm in 24 hours or less. But even if the Hurricane is over land,it still smashes the area with heavy rain and strong winds. When you look at landfalls, you can see that the eye of the Hurricane closes and that's the common sign that the Hurricane is starting to weaken.Lets say if a Hurricane would hit Brazil or countries with the Amazon forest. If the Hurricane would be a cat. 5 at the time of impact, it would waken to a cat.1 or 2.But it wouldn't break up.Why,well because the Amazon is a very wet and humid place so the storm would still get water vapor from the jungles.

The energy of a hurricane is derived from the latent heat of condensation of the ascending moist air. When the hurricane enters the land, its moisture source is cut off and consequently it weakens.
