I'm a beekeeper and I did some research on this excellent question because I didn't know the answer. Turns out the answer is YES - some wasps DO produce honey, however most do not. Honey is typically created as a food source for brood among honeybees. Most wasps rely on protein from other insects as a food source.

The Polistine wasp is an example of a honey-producing wasp. There are no doubt others as well.

You might want to think twice before eating any though, as some of it may prove to be toxic to humans.

I grew up in the state of Guerrero in Mexico in the early 1950s. We lived in the county and we boys spent much of our time in the surrounding jungle hunting with sling shots. One of the things we looked for were paper wasp nests of a certain type. We would shoot these out of the tree with our sling shots and wait for the wasps to go back up to the location where the nest had been and then break the paper nest apart. The nests would be from the size of an orange up to 12 inches long by 5 inches in diameter. there were horizontal disks attached to the sides of the nest. Some of these contained the larvae and some were filled with honey. We ate the honey along with the paper cells. It was a real treat for kids that only got candy two or three times a year.

not sure about hornets but wasps dont. they just make really weak hives

Not really. Pollen wasps (Masarinae) feed their larvae honey, but most wasps feed their larvae on paralyzed insect larvae.

Hornets are a type of wasp, very large ones.

Yes, but not in large quantities. The amounts are not harvestable.
