There are several types of volcanoes, some with "mild", continuous eruption (like the Hekla in Iceland, or the ones in Hawaii), some with violent ones (Mt. Etna in Italy, Mt St Helens in the US).

Krakatoa is a good one. Very destructive.
Etna and Pinatubo are good, too. Personally, I'd go with Mt. Saint Helens.

For my money, I'd go with Paricutin in Mexico. The locals watched it essentially being born, and scientists were able to observe it in its formative stages in 1943. Fascinating....
