for example, to save space i decided to grow planets on top of each other instead of next each other. for example:

instead of this:
------- ------- ------- -------

it will be like this:
------- ------- ------- -------
------- ------- ------- -------
------- ------- ------- -------
------- ------- ------- -------

will planets grow normally like that?

You can do this with certain annuals because they die after the year. However I think it wouldn't be a good idea with perrenials because they need space for the roots to grow.
