Yes you would be breaking Church Doctrine by getting a vasectomy. Vasectomies constitute a form of artificial birth control and are morally unacceptable.
There are morally proper means of regulating such things. You should look into Natural Family Planning. When done right, it can be every bit as effective as artificial birth control.
Be that the case, you might be tempted to ask, "What is the difference between my using artificial or natural birth control?"
Objectively morally speaking, the ends cannot justify the means.
You don't want any more children, okay. You are free to exercise birth control - but only that which does not contradict the natural order. A vasectomy is an artificial way of interfering with the way nature intended the reproductive aspect of life to work. We have to pay attention to what nature intends. Nature is a high power than mankind, but there is also a High Power to nature - God. Nature functions the way it does by Divine Design, not by accident. Therefore, that directly interfere's with what nature intended is a sin against nature and, by association to nature's Creator, a sin against God.
Natural family planning techniques, which are effective when done properly, does not offend the intention of nature so it is not an offense against God.
I would love to tell you way here but it cannot be done in a PG manner. Know what I am saying?
I can recommend a book called "The Good News about Sex and Marriage", by Chris West. It covers, in all detail, the reasons why certain forms of birth control are immoral and why others are not. In fact, the book addresses vasectomies directly.

Although the Catholic Church may teach that it is a sin, the Bible does not. Pray to God about it before you do it. What's worse is an unwanted pregnancy.

I believe they are against it, but it is best to ask a Catholic priest.
