There is a game called work-up. There is one batter, one pitcher and the rest playing are outfielders. The batter hits the pitched ball. The outfielder that catches the ball moves to the pitcher spot. The pitcher becomes the batter. The batter goes to the outfield. This continues for as long as you want to play.

Yes, we play a game where you could only hit to either the right or left hand side of second base. If you hit in the wrong direction you are out. The batting team supplies the catcher. Thus you can get by with 5 per team
