To be more specific, I have a 72V motor with 3HP power, 3000rpm at 40Amps current, which is bi-directional. Can it generate electricity when attached to a windmill or any kind of rotation source?

How much current will it be able to generate if the shaft is rotated in reverse in same 3000rpm? will it be equivallent to 40Amps?

Any DC motor is a generator also, so you will get voltage at the terminals if you rotate it, but the efficiency is much lower.
So you may not get expected power out put. You may get about 50%.

An electric motor converts electrical energy into mechanical energy. The reverse task, that of converting mechanical energy into electrical energy, is accomplished by a generator or dynamo.

yes all the dc motors (which does not have a speed controller inside) which is in good working condition will deliver dc output when rotated ,the output voltage will be directly proportional to the speed of rotation

any motor that is turned by some source will produce some electricity depending on how fast the motor shaft is spinning

Yes when shaft is rotated in reverse direction it produces reverse current due to magnetic cut produced in reverse direction.
