Have you ever been in a restaurant kitchen before? The plates get rinsed with in about ten minutes of use and then run thru the dishwasher, about 1/3 of them are still dirty so they get scrubbed off and run thru again. The pots all sit in hot soapy water for a couple of hours before being scrubbed and then run thru. It seems like they are great but the are mostly just for sanitation.

The type you are wanting only "seems" nice. Restaurants scrape all the food off and rinse them well and the rack is taken through the washer by a conveyor. There is no dried food on the articles being washed. The water temps are around 180 degrees for sanitation purposes and they don't always come out clean either.

My dishwasher works really really well when I use good quality detergent. I think what detergent you use is the most important thing.
