Generally a bus boy (or girl) cleans tables, collects dirty dishes and silverware, dirty tablecloths, and takes them to a dishwasher or linen collection point.
With a catering company the items collected might well be disposable items such as paper linens, disposable plates and silverware or a mix. Since catering usually involves events a lot of the work might happen once the event has ended.

Also bus boys will also act as a runner if something is needed to be refilled like certain foods will be needed from the kitchen/back they will take the old containers and replace them with new ones, or customers will need drinks refilled more coffee creamer, butter, bread ect. they will also clean any spills broken glass. There probably be some heavy lifting involved. Plus its nice to make daily tips.
