basically i can see the insulation and i want walls to start organizing and hanging stuff

Put up drywall first. This will hide the insulation and provide some fire protection. Then you can install pegboards, shelving and cabinets where ever you want to suit your needs. Home Depot and Lowes have all kinds of products and services to organize a garage.

I used peg board to cover insulation in my garage. It looks good plus I have tons of storage place on the walls by using a big variety of pegboard hooks

Sheetrock & tape for fire protection then fir out the wall for peg board, channel board, shelves, etc. that will be the cheapest way to go but if you don't mind spending cash go to the New Yankee Workshop & other websites that have a ton of ideas for garage/workshop.

I would use pegboard on the whole thing. That way you can use it to organize as much or as little as you want.

You have several choices; dry wall, paneling, particle board and/or peg board in some areas.
