Well the sound comes from the thumb releasing from the middle finger, but the sound actually doesn't come out until the middle finger hits the palm. Nice observation

the rubbing of the middle finger, against the thumb, starts the higher tones in the note while, the striking of the middle finger against the outer palm, supplies the deeper tones, the resonance and, brings the note to an adrupt halt.

When the middle finger hits the palm of your hand. I just tried it with my other hand covering my palm, and it wasn't as loud. So it's gotta be when your middle finger hits the palm of your hand.

I'd say it's a combination of the two,
when your middle finger leaves your thumb there's a bit of sound but not enough to be the whole sound.

When it hits the palm of your hand. I would have never thought of that! I tried it, and when I block my finger from hitting my palm, it doesn't make that snapping sound.
