To find your simple subjects, you begin by looking before the verb of the sentence. The subject of many sentences answers the question "who or what is doing the action?" The subject(s) must also always be a noun.

In your sentence "Jim, Sally, and Fred went to the store." "Jim" is a noun, and is doing the action = therefore a simple subject.
"Sally" is a noun and is doing the action = therefore a simple subject.
"and" is a conjunction (and therefore not a noun) and cannot be a subject.
"Fred" is a noun and is doing the action = therefore another simple subject.
"went" is he verb of the sentence, which means we have found all our subjects because no subjects can come after the verb.

Jim, Sally and Fred are the subjects. A compound sentence has two sentences connected. For example, Jim went to the store and Sally waited in the care. Jim went is the first subject and verb and Sally waited is the second.
