There are lots of online services that will let you download the file of the youtube video to your hard drive. That said, none of these that I know of will convert that file to iPod compatible format for you.
Luckily this program (linked below) does just that. It is a iPod video converter that will convert just about any video format you throw at it to iPod (and therefore iTunes) compatible. Plus it has this really cool function that will pull down youtube videos and convert them for you in one fell swoop.

Use firefox to download youtube videos. Firefox is free. go to this website and follow th steps on how to download the video the you want and convert it to mpeg so that you can play it at windows media player.

copy the video link off of youtube. go to www.vixy.net and save the movie onto your desktop. upload it into itunes by either importing it or drag & dropping it.
