Convertibles are cool during the warm summer months, but they have two glaring problems:
1. Even with the top up, you still get a lot of road and traffic noise.
2. The tops deteriorate. Basically in 7 to 10 years, it looks like crap.
Sunroofs are cool, but since they really don't open things up all that much, after the first year, you tend to ignore them and not use them.
The best of both worlds is a hard shell covertible top, but those tend to exist only in the higher end cars. However, they do cut down on the road noise when up, plus they don't deteriorate like the fabric ones.

Convertible all the way. That way you have an open view and nothing to block the sun's rays.
Ideally, a hardtop converible. The best of both worlds. No leaky top, and again the clear view of nature as you tool down the road. good luck

Sun roof! No matter what safety features they say the have, watch the salesman's eyes go all skittery when you ask what if I flip this thing, how safe is it?? Happened to me when I thought about buying a convertible. That was all I needed to know I would die in one.
