Mambo is always danced on 2. Salsa can be danced on 1 or on 2, but most popular is on 1.
Mambo's technique is stricter and more uniform than salsa's. Mambo is danced competitively. It is one of the dances in Rhythm category of American Ballroom. While salsa can be danced competitively as well, it is more of a social dance.

As usual, Snowflake has a good answer. Most of the "left coast salsa" I've seen has been just sloppy mambo danced on the one, but some people actually teach that a basic salsa step is a chasse, being essentially the same step as the basic in bachata, and the mambo patterns are an alternate. Many think there's more of a side-to-side feel, at the least, to salsa, as opposed to a forward-and-back feel to mambo.Tito Puente, whose music is routinely marketed as salsa, pointed out that "salsa is what you eat," and thought the whole idea, which began simply as a marketing ploy, was silly, and that it was all really mambo. If you get a chance to see somebody like Fabian Sanchez of Birmingham, AL doing mambo (he's current US champion) you may have to agree.
