for example, but I know that's probably not right...

All you need is
color: green;
applied to the appropriate container. If you want the default text in the page to be green, apply this to the body:
body {color: green;}

The above is correct, however try and use hex colors as all browsers understand them.

So for paragraph text:

p {
color:#FFFFFF;
}

gives your paragraph a color of white in hex.
