I can't believe that no one has yet given the right answer so here goes,
It originates from the cutting of a slice of bread from a loaf which always produces one side with a greater surface area than the other. The well off would spread the butter on the large side while the poor would use the smaller side. Therefore to know how well off, or lucky, you were was to know which side your bread was buttered on.

You don't know what's good for you. The person who butters your bread is the person who can advance you. So if you know what side your bread is buttered on, you know who to impress or kiss up to. You know how to get ahead.
