I'm looking for something that will hold its charge for a long time without being used/charged.

Ok, i think i need to be more specific, you see trickle charging is what was done in the past, not quite as simple as you make out especially since the engine although an escort is in fact used on a boat.

If you're not going to use the car for extended periods of time, I would hook up a trickle charger or battery maintainer to your battery---they plug into house current and charge your battery at a low rate like 2 amps (and get one with automatic shutoff ) to keep it from going dead. Most parts stores or home centers carry them. Any battery you install will drain down eventually depending on what parasitic loads the computer and other devices put on it. Otherwise, but the highest cold cranking amp battery you can that will fit in the battery tray.

Go to any Auto Parts place and look up your particular Car and engine size. A diesel requires a battery with a high number of Cold Cranking Amps (CCA)

Without knowing the year, I took a shot and found a reference for a 1984 Escort with the 2.0L Diesel. It calls for a battery with a minimum of 900 CCA. Autozone carries one by Optima for $239.99

I'm sure your year with a 1.6L diesel should be pretty similar. You can find them at any local auto parts place or repair shop, such as Sears Auto Centers or Pep Boys.
