what's the difference between the fresh,frozen, and canned green beans after cooking?

will they taste the same? what bout the texture and colour(something to do with chlorophyll rite?)

and does microwave cookery cause a greater or a lesser color change than stove top cooking? why?

they taste different.

fresh obviously will give you the most green bean flavor
frozen tastes more "watery"...or bland
and canned tastes a bit saltier to me.

the microwave shouldn't matter, as long as you get the cooking times right and make sure they are cooked IN WATER

Fresh, or good quality frozen beans will have very nearly the same color, taste and texture. Canned beans are cooked as part of the canning process and many of the nutrients and some of the color is cooked out. The taste of canned beans is also not as good as fresh or frozen beans.

As for the microwave, it depends on how you cook them versus how you cook them on the stove top. Steamed in the microwave, the color will probably be a little better than stovetop steaming, and taste will be about the same. But if you cook them in water, it will be about the same whether in a microwave, or on a stovetop.

I saw a TV documentary on this sort of stuff only the other week. After loads of experiments they determined that frozen was best, and steaming was best way of cooking. To explain fresh foods are often a couple of days old before getting onto the shelf and often handled several times, freezing is usually done asap, and canning results in a lot of vitamins and minerals remaining in the juice.

They are already cooked and just need warming up. You don't usually have to add any extra water as there will be liquid in the can, but you may wish to add extra seasoning or some butter to improve the flavour. Be careful not to oversalt as green beans are often canned in salted water.

there is less salt in frozen beans . they will not taste the same because of the salt difference. micro causes less color change due to use of less water in the cooking and less time exposed to the water

the frozen iz better has a more fresh taste
