For me, it serves several purposes.
First, like everyone has already mentioned, it helps the students get into the mode of thinking and getting focused. Depending on when your class is, it helps settle them down. For example, if your class is after lunch or PE, it helps the students quiet down and get focused.
Second, doing a warmup on a daily basis helps your classroom management immensely. My students know as soon as they walk into the class, they copy the day's agenda, and then do the warm up. I don't have to explain to them everyday what they need to do at the beginning of class.
Finally, it gives me about 5 minutes to take care of general class business while still being productive. Signing class re-admits, taking roll, giving a student make up work, etc., can be done during the warmup without bringing the class to a standstill.
Those are the main reasons I use a warm up in class. Hope it helped.

To allow the teacher to take attendence, sign agendas, run a message to the next room, answer the phone and 25 emails before first hour is over! LOL
Now physical warm-ups actually get blood flowing to the brain, brining oxygen which helps the cells function better but we don't do those anymore do we? Maybe someone thought "bell work" as we call it would help do the same thing??

They should really be called bore-down activities because they are they are just to prepare you for another boring day of school.
