Tough one, he has so many good ones.
I liked Witches of Eastwick, that was fun. I also liked him in Easy Rider and As Good As It Gets.

As Good as it Gets. That was a great character, and he played it so well!
Jack is a fantastic actor. The first film I saw him in was Easy Rider.
One Flew Over the Cuckoos Nest was also excellent, as was The Departed.
