Well, it depends if it's your wife (mother of your children) or your mother.
Your wife.... make breakfast, rub her feet with scented oils, bring her to a bookstore and tell her to pick out 2 or 3 books or CD's she likes....and let her have time to play them/read them while you take kids out. At night, end of day, leave her a small, inexpensive piece of jewelry on pillow, say a pair of pewter earrings or a simple bracelet like a silver link bracelet. (can get this for like $20 on sale in Macy's).
If it's your mother.... does she play golf? take her out...just you two...for a day of golf with her son. If she doesn't....ask her to join you for breakfast at a diner and then take her to the cemetary to see relatives if she's older or take her for a drive. If you live in the city, take her for a nice walk and an ice cream.
If you aren't in the same town and able to do that...... send her a raincheck for when you visit in person to do it...

Buy her a special tree , and plant it for her. Every year she will see the tree grow, and remember you gave it to her. A restaurant dinner later would also be nice.

home made things. she'll love spending the day with you making a scrapbook, looking at pictures, memorizing, hearing a poem you wrote about how much you love her, and cleaning up around her house.
