I've got the large, vidalia type onions growing in my vegetable garden and trying to find out what to look for when it's time to pull them up

I would presume when the shoots are a vibrant green, and the bulb is projecting out of the ground...or, read the "instructions" on the package as to when you should harvest them. Take 'em one at a time until you're ready to harvest them all. That way you'll be able to see first hand when is the best time to take them. It's kind of an art form, learning when its best to pick veggies. Some are blatantly obvious, some are sneaky and try to covertly hide their peak of freshness from you.

Let them grow until they are the size you want. Probably a little bigger than a baseball would be best.
