The hard drives on the server need to be defragged real bad but I don't want to bring the network to a standstill while I'm running disk defrag. Windows 2000 is the OS so I don't have the ability to set a tme for it to automatically start.

Actually if any file changes take place while defrag is running defrag will restart! So if there are clients running you will never get the job to finish just tie up a lot of resources to no outcome.

Stay really late, work on the weekend, or kill the system to run it is the only way to get this to work.

Not a good idea, you need to do some overtime. Defrag will not be very successful on a running server, the constant file changes prevent it doing a satisfactory job.
