The only two ways I know of:
To a phone WITHOUT an internet connection - you can sign up through MSN so you can check your hotmail emails, have a look on your msn options. (Costs a bit to read it all, but good if you just want a quick glance of what you've got.)
To a phone WITH an internet connection - ask that person to send you an email from their phone (this should be in the messages section in any of the newer phones) and once you've got that phone number, you'll be able to reply to them.
I'm not exactly sure how, but I have previously sent an SMS email and recieved online replies.

This can only be done if the person you want to send mails to has some way of reading his or her email from their mobile phone.
Blackberry enabled devices do this, as do some others (usualy via GPRS/a mail server) but it will need setting up at their end.
You can't just send an email to someone to have it appear as a normal SMS message, no.

Yes, provided the recipient has an email enabled phone AND he has enabled the email facility with the service provider. The address would be something like 07NUMBER@orange.net
