Sometimes if a person is concentrating too hard during a pressure situation, he will tend to "clench" and hold his breath. If you focus more on continuing to breathe normally during these moments, it should help alleviate your problem.

Wearing shin guards can boost your confidence.
You should also wear supporters.
Maybe you're just worrying that those parts of your body will get slammed by the ball or your opponent.
You don't need to guard the opponent just focus on the ball.
Always be in front of the ball. Practice running backwards and sidewards. Do the stance that basketball players do when they're in defense.
I think you just have heart problems.

I'm not sure how you defend during one on one. But for me
I don't follow the opponent too closely.
I always keep a distance away from him and make sure he dont dribble past me.
This help me to save alot of energy. Dribbler would like defender to come near him so that he can out run him with pace but if you keep a safety distance from him he can't do anything but to pass the ball :)
Here is a few tricks for defender.
1) Don't commit tackle unless unless your goal mouth is in danger.
2) Try to pressure opponent to the sidline.
3) Tackle with timing. I can't teach you how to time your tackle but I always tackle when opp. going to take a shot.
