How do I tell what gender my fish is?

It's very difficult unless the fish are in breeding condition. Here's a link with pictures that can help

When they're young? Nothing short of a DNA test! I've attached a site specific for sexing goldfish and koi. But you'll see that until they reach maturity, there really isn't a way to tell. Sorry :(

You don't, if you want to breed them buy a mated pair. BTW it is very difficult to keep them alive. If you do manage it, only 10% will probably survive to sell.
