I think "salad days " means when you were starting out and thus poor and couldn't afford meat, only salad. I never heard of "specimen days", sounds kinda medical.

Salad days means your poor - can't afford meat or a the main course.
Never heard speciman days so not sure what that means - could mean after your dead and they are using you as specimans.
