To work is about 400 miles a week on the interstate at about 70 MPH. What size bike do I need for this kind of mileage?Some of the bigger bikes don't get much better gas mileage than my midsize car.

Even a modern ( past 4-5 years) 600cc bike like a gsxr, kawi zx6r or cbr would do fine on the interstate. They have the advantage of needing little fuel at cruising, but have a second set of injectors to give the additional fuel to make the 100+ horsepower that they make. Bigger displacement bikes have to fill up the cylinders everytime too and they need more gas to do so. You may however want to think about comfort. Maybe a Suzuki DL650? Not beautiful to look at, but a great bike...and please don't buy a ninja 250, just because it CAN do 70+ doesn't mean it likes to do it.

You want something with a little beef to it if you're taking the interstate both ways. I like motorcycles too, and fundementally this sounds like a good idea, but considering you won't save much on gas with the sized bike you'll need for the highway, you might jsut stick to your midsized car.
I work in a hospital trauma center. Most of the interstate motorcycle victims go right to the morgue. After the docs put the other ones back together, I get to do therapy with them.
You've seen the sheer negligence and idiocy out there. Don't risk it my friend.

Anything 600 cc or bigger will do fine. A lot of gas mileage on a bike is avoiding the temptation to hot rod.

ALL BIKES ARE FUN......

gas mileage..not part of the equation....(not for me anyway..Im having fun)

performance costs gas mileage....so sports bikes chew juice.

buy a mid sized touring bike....should fit the bill...

A 700 to 800 should get around 50mpg.
