It's a little confusing to me.

If it's run by the Cruz family, it should be The Cruzes' Choice...because there are more than one of you. If it's run by someone named "The Cruz", then grammatically, it is correct.

Also, Culinary is not normally used as a noun. You might try The Cruz's Choice Kitchen, maybe, or Culinary Cafe.

well, culinary is an adjective, so it sounds funny after the noun (choice culinary).

The Cruz's Culinary Choice
that's proper grammar

if it's the cruz family it would be:
The Cruzes Culinary Choice
if Cruz is the name of a person it would be:
The Cruz's Culinary Choice

personally, i would take away "The" or go with something catchy like Triple Cruz or Triple C

So you want to know what's wrong with the restaurant name? (I wasn't sure what you needed to fix or why)...

You don't need the S after the apostrophe in Cruz's. It should just be Cruz'. No s needed in a possessive of a word that ends with an S or Z sound.
