You can purchase tickets up to 120 days in advance for these shows, and it's a good idea to buy as far in advance as possible to get the best seats.

Las Vegas is mainly designed for people who like to gamble, but the super casinos they have revamped or built within the last 15 years to compete with other gambling areas in the country have also become shopping meccas. The shopping in Las Vegas, NV these days can't be beat. It's some of the best anywhere. The casino where Sigfried and Roy used to perform has a zoo with big beautiful cats. There are also interesting museums in Las Vegas.
You should at least see Cirque De Soleil if you see any show there before you go on your excursion to see the rest of the state.
You are correct in wanting to see the Hoover Dam, etc while you are there. The Grand Canyon takes more than a day to see; it's gigantic, so I'd be skeptical about a tour bus trip there. Lake Mead is pretty cool too. The Hoover Dam tour is pretty quick as there isn't much to see, it's more of a technical tour.
Dress sparingly. It's hot there! and welcome to the Wild Wild West!!.
If you get a chance you should make a point to see Bryce Canyon in Utah. Don't just look over the edge like most lazy people do. Hike down into the canyon. It's breathtaking. Zion Canyon in Utah is pretty cool too

Vegas is not boring for the non-gambler. There are tons of shopping outlets. The strip casinos have many attractions that are certainly to draw in gamblers but can be enjoyed by anyone. There's the lions at MGM Grand, the night time pirate show at Treasure Island, and a circus and indoor amusement park in Circus Circus to name a few.
As far as shows I believe I heard Ka was very good.
Be sure to eat at The Top of the World at the Stratosphere. The food is excellent and you will see the whole city.
You should tour the Grand Canyon in the day and hit the clubs at night but be prepared for a costly cover.
I just moved from Las Vegas and miss it dearly.

Where are you from? If you're from somewhere that's fairly accessible to Vegas, I'd recommend spending the whole time there and do the Hoover Damn and Grand Canyon on a separate trip. If you think this is the only time you'll be able to visit that area in your life, you might want to see as much as possible.
I've been to two shows: Lance Burton and "O". I love magic so I loved Lance Burton at the Monte Carlo. Best value for a show in Vegas. I wasn't as impressed with "O" as most people seemed to be. To me it was just acrobatics, syncronized swimming, and diving. Why not just watch the Olympics? I paid $100 for,at best, a "$20" show. I heard Celine Dion is great but I haven't seen her show.
I went to Club Ra (Luxor) and Club Rio a few years ago so I'm not sure how they are now. I'm sure there are plenty of newer clubs to choose from.
Vegas is an awesome town with lots of energy and excitement. You'll have a lot of fun and I'm sure you'll be planning your next trip back there in no time!

Take a helicopter tour then go skydiving, after that check out the forum shops at Ceasars. Downtown has cheap eats and everything else. Hit up a club like Rain, Tao, Studio 54, Rum Jungle is fun. Mystere is awesome Cirque show. Zumanity is a Cirque show that shows some nudity. Bellagio has the best dinner buffet in my opinion, yet you are looking at about $35+ a person. Bellagio has its fountain show, Mirage has its volcano show, and TI has it pirates show.
