For IIS visit the Micrsoft Technical Library.. for apache
http://apache.org is a great place to start.

There are several linux distributions that set up all but fine tuned apache as part of the installation process.. I would use one of those personnally and go from there. In fact several of them setup a full LAMP (linux, apache, mysql, php) system as part of the server installation. The all that is left is learn to use it.

I guess there is also a WAMP package (Windows, Apache, MySql, PHP) but why anyone would want to do that is beyond me.
