Well, I'm not sure what grade level you're at or what the specifics of your assignment are, but I can throw out a few ideas.
Mary Jemison--settler captured by the Iroquois in New York during the French and Indian War and raised among them. She later married an Iroquois man and chose to live out her life among the Iroquois people.
Madeleine Albright--first woman to become Secretary of State, among lots of other interesting achievements.
Frederick Law Olmsted--was a great American landscape artist whose work included designing the grounds of the 1893 Columbian Exhibition (aka World's Fair) in Chicago, Central Park, the grounds of the US Capitol, and the entire park system of Buffalo, NY.
There's three good ones I'll bet nobody's chosen yet.

How about Susan B Anthony, or William Henery Harrison? Many people do not know who they are, but they are very interesting.
