The ranchers and cowboys would herd the cattle from where they were raised to the place where they would be put on trains to be taken to factories of whatever. Or maybe if you sold someone all your cows they would just come and round them up and drive them to their own ranch...that's probably faster than trying to put them all on a train or something.
