Gotta have the hamburger mix ( add things and seasoning to make it soft not crumbly) that I make for it and cut up Italian sausage --with all the layers of noodles and ricotta cheese and homemade sauce, I'm Italian and make Lasagna the way my Sicilian grandma did .

Actually, you can make a pretty delicious and healthy lasagna without meat and sauce. After boiling the lasagna, toss together some lemon juice, black pepper, salt, and a little bit of olive oil. Keep aside some fresh greens, such as basil and parsley. Pour some of the lemon juice mixture over the first sheet of lasagna, add the greens, and any kind of cheese that you like best (mozzarella or even cheddar). You can cook up some butternut squash puree (I am assuming that you are allergic to tomatoes) with salt, pepper, oil, fresh herbs, and garlic. This can be used as a sauce. You could probably leave it out and cut up some veggies (such as broccoli, which goes really well with cheese) instead. Continue layering and following the steps. You have yourself some delicious, healthy, lasagna after its done in the oven. Top with parmesan for a cheesy crust on top! Mix in some bread crumbs or romano as well. *To answer your initial question, you can use just noodles and cheese. However, it will probably lack flavor and will be dry.
