Do a lot of medical students want these residencies and end up doing a different residency because they cannot get in to an OB-GYN residency?

It is very hard to get a residency spot because all residencies are so competitive. When a Medical student chooses what specialty they want to go in to they make a list of hospitals to apply to for the residency programs and then there is a special service called a Match service that hopefully helps them get the hospital they want for their residency after they have interviewed at all places.

To find out more about some of what the Medical Students go thru please check out http://www.aamc.org

You may also be able to find additional information at WebMD

And yes some may choose other residencies because they can't get what they want for residencies but some may also go do some of their training oversees.

Another site you can find out more about OB/GYN is at: http://www.acog.org

And also http://www.obgyn.net With this one you can click on where it says "physicians" and find all kinds of info there such as special lists for both drs already in practice and physicians in training (these are the residents).
