make it personal. you can go with a quote, but anybody can do that. You're already giving him something special so make the inscription special as well. I'm sure you'll have no problem with that. My dad used to have one with a date in it. Not sure what that date meant, but it seemed to mean a lot to him.

I work for an engraving company, here's some advice. Don't buy a pocket watch that uses a battery. They are cheap and cheesy. They also usually have a finish on the inside that makes it very difficult to read the inscription. Instead, go to a jewelry store that sells "estate jewelry". They often have antique (early 20's to 40's) pocket watches that have been refinished and cleaned. This is of course a bit more expensive and high maintenence than a quartz watch. As for the quote, I can't help, I've engraved so many good and bad ideas I'm numb.

This is what my great-grandfather did. He bought one and had his wife's name and year engraved inside but at the top of the inside panel. When great grandma was ready to give it to her daughter, she took it back to the jeweler and had my grandma's name and year that it was given. She did the same thing when it passed on to my mother. I inherited it before mom could have my name added.
It's not exactly what you're asking for, but it turned out to be a family tradition from the 1800's. And this way should you ever break up (God forbid) then he can still pass it down to his son in the same tradition.

I would come up with the saying on your own, so it's from you and your feelings. Then have it translated into latin or french. Different and heartfelt, can't go wrong with that!
