There are some traditional souvenir shops on the 16th Street Mall in Denver, not far from the Pavillions shopping plaza. There are even some cheap souvenirs in the Walgreens on 16th and Stout.

Wal-mart in some areas.
Rockies Dugout at Coors Field (for authentic stuff, not cheap)
Online is where you will find the best deals.
The big winners are going to be at the tourist spots. The zoo, the natural history museum, the Childrens museum, Aquarium, Elitches, and so on.
