Mina is close, though her position for "color" is rather odd. Usually it is placed at the END of the "physical characteristics" - after size, shape and age.

So, using your terms, the basic list would be something like this:

- Determiners ('the, these, my...')
- Quantity
- Quality (= opinion, observation... more subjective)

PHYSICAL FEATURES
- Size
- Shape
- Age
- Color

- Origin (may =Nationality)
- Material (made from)
- Type, purpose

The first may be the most convenient, the second is much more detailed AND includes some notes about which adjectives are more-or-less 'fixed' in order, and which may sometimes move.
