What's the difference between the two and why do people choose "University of" over a "State University". Ex: University of Texas and Texas State University (The use of Texas doesn't matter, it's just an example)

It really depends. In California, the UC (University of California) system is more prestigious than the CSU (California State University) system. Also, sometimes "University of" colleges are private colleges, while "State University" colleges are public.

While this varies from state to state, in many places (such as California or Michigan) the "University of" system is made up of the more prestigious research institutions, while the "State University" system consists of more teaching-oriented universities.

I think, one of the reasons, their differences in terms of their overall or academic positions from the yearly ranking as surveyed and published publicly such as the one by the TIME weekly magazine.

You may visit the magazine's web site for its latest worldwide Uni ranking or the US Uni ranking and you'd see the top-ten prestigious universities many students would like to attend to study since they've produced innumerable famous graduates and of course their faculties always have top academics in their fields of studies to teach and research. In short, they're already in the world-class higher education institutions. Then you would see how many US universities are in the category of "University of" or "State University", and as far I know, many top US universities are private, that is, run by dedicated individuals or foundations such as Harvard, Princeton, Cornell, Stanford, Yale, etc.

It's just the name of the school. Students are looking for different things in a school and campus. They may prefer one school over another.

Typically, a "state university" is one that is considered public and is supported somewhat with public funds.

A private university is supported with private funds.
