We generally have activities such as sports, watching television, exercising, dancing, cooking, shopping, making love, reading, traveling etc. I know fish are limited to their fish tank and whatever is in it, but what are their daily activities, do they ever get bored, what do they enjoy?

Fishes brains are rather simple, they don't think the way we do so they really don't get bored. Their actions are fairly well governed by instinct.

Theoretically its believed that fish have a very short memory span. About 3 minutes or something.. Thus they dont get bored. Plus their brains are very simple. Just swimming around is good enough activity

Depends on the fish. They swim, sleep, and eat. You can add things to the tank, but I don't think they will really care.

Swim, eat, crap, screw (fishie-style)...

Sounds like a pretty nice life to me.
