I agree with the above answer about the washing machine and hot water heater breaker, but also dont forget the little things like mail and papers and fliers hung on the door, all of these are obvious signs your gone, which is not a good thing.
In Florida with the humidity we have leave your ac on about 85 or so, it wont kill you on the electric bill, but will pervent you from smelling a moldy damp house when you return

It is always best to unplug all big appliances like the fridge and stove. Also some smaller appliances like radios etc. Not only do they suck hydro even when they are not working but they also make unneccessary dangers like fires and what have you. You will feel safer and more secure if you know they are all taken care of.

i would only add that alot of houses do have a valve for shutting off the water inside the house..my neighbor went on vacation a few years ago and came home to a flooded house from a broken waterpipe... it only ran for like 2 days they somehow figured out but i know they had to do alot of work on the house after that....

Turn off the water and unplug appliances, keep air circulating (a/c) in your house or you'll be choking on mold next time you come back.

You may not have to turn off the water, but it is wise to turn off the clothes washers water valves.(to prevent a hose rupture) Cutting the breaker off to the hot water heater will save. adjust the a/c to a higher setting will save ,but keep the house in a safe temp and Humidity range
