OK, to let you know exactly what I am looking for, is a convertible car (two or four seater, doesn't matter) that I would be able to find to buy for cheap, is easy to work on, has inexpensive parts that are widely available, and that gets 30+ mpg. Foreign or domestic doesnt' matter. What car fits that bill?

30 plus mpg is hard to find and then you want inexpensive. but here's some ideas.... Honda S2000, Mazda Miata,

Mazda Miata rated at 30mpg on highway.
Chrysler Sebring Convertable rated at 31mpg on highway
Volkswagen New Beetle Convertable 2.5L PZEV rated at 30mpg on highway.

City mileage typically 5-6mpg less.

You can get really good cheap cars from auctions , you will find thousands of different auction and repo cars really cheap at http://www.carauctions.co.nr
