Each team decides their home and away jerseys. Tradition has always been that the dark colors are your home colors. Think about it, you want your team wearing as much of it's colors as possible and the visiting team being represented by as little of their colors.
The one catch to this is, the home team gets to decide which colors they want to wear. So, while the home jersey technically is the dark jersey, many teams prefer to wear their whites for home games.

The Dallas Cowboys began wearing white jerseys for home games in the mid-1960s. This was so their fans could see the opponents' dark jerseys "in living color". I believe the Cleveland Browns did this during their early years in the old AAFC. I heard this on NFL Network awhile back.

You've got it backwards. Traditionally in the NFL the home team does wear their dark uniforms and white for road games. Almost every team in the league does this with the exception of Dallas.

Mostly tradition, sometimes marketing ploys.
Also, in the south, most home teams will wear white jerseys during September to force the visitors to wear dark colors in the blazing heat.

Actually it is a team thing. Cowboys wear white at home, along with the Redskins. On warm days teams in warmer climates wear white at home for the advantage that white doesn't absorb the sun as much.(Miami, Arizona, San Diego ect.) Unlike other sports, football doesn't seem to have a norm about what uniforms to wear.

All teams in the NFL wear their "team color" (which is normally the dark color) jerseys at home except the Cowboys. I have no idea why they play in white, but they do, they're just that stupid and think they're the greatest.. fools
No idea who made up these rules.. but apparently these rules don't apply to the crybaby cowboys.

Teams can pick which color they want. Usually they will wear the color jersey for home games because its their color. Dallas wears their whites at home because its cooler for them. Most home teams side line is in the shade for the same reason. For example last the Jags wore the whites and made Dallas wear their blues because its so humid in Jacksonville.
