It's really annoying when places do charge you for extra that you consider normal thing. Not all places are equal here even among same restaurant chains. Ask before if you can do a substitution free of charge. Most places will do it but sometimes don't because they have a special price for a fixed recipe. They are used to do a certain thing, takes less time and since most people order it that way then they can have a better price for it. Best thing to do is try other places, you'll find the ones that won't charge you more for those extra and will gladly remove anything you don't like. This is true for sandwiches as well as coffees!

probably because the cheese costs more then the veggies. I think they can write the veggies off as waste but the cheese is a bit more expensive. It's a cost thing really.

True, I've never known of a restaurant, that took off the price if you asked them not to bring the pancakes that ordinarily come with the breakfast. Or ordered just meat and potatoes, and not any of the other stuff, that is "suppose" to come with the meal.

Ask if you can "substitute" the veggies for the extra cheese. I always do that with pizza that comes with two toppings, I say can I substitute extra cheese for the toppings and they always do it for free.
It's worth a try.

Yea, or when you substitute a side that the meal comes with, with another side they charge you like a dollar just because you substituted. Trying to get our money everywhere! :))

yeah, i work at burger king...if you want cheese its an extra 40 cents, most people don't even notice. They even charge for extra tomatoes!!
