None of the answers given so far are bad, but they will, at most, only give you an idea of how most English speakers (specifically, speakers of American English) pronounce Goethe's name. If you want to pronounce it as a native speaker of German would pronounce it (which pronunciation does not sound as pretentious as you might imagine), here it is:

The only sound in "Goethe" that may give you any difficulty is that represented by the letter-group oe; the g is as in English "get"; the th is pronounced as the t in "tick"; and the final e is pronounced as the a in "about" (needless to say, this e does not carry the primary stress in the word). As for the oe (which sound is, in German, also spelled ö), it is best pronounced by positioning your mouth as if to pronounce the e in "grey", while rounding your lips as if to pronounce the o in "for". The result should sound something like the RSP pronunciation of the letter-group ir in "bird" (RSP stands for "Received Standard Pronunciation"―the so-called "king's English" of Great Britain).

This is JUST a guess...I'm sure someone MUCH smarter will answer after me, but I've heard it pronounced "get".

To the best of my knowlege, the proper pronunciation is:

"Gur-ta"

Short 'u', long 'a'.

This might vary regionally, of course.
